Hubby gets home about an hour before me every night, so a few nights ago he surprised me by making dinner!
He took on something that I actually have never made before...homemade mac and cheese. As you can imagine, it was quite delicious.
There aren't as many photos today because it was mostly done by the time I got home, so it's more of a "highlights" post than a step-by-step.
Recipe credit goes to AllRecipes, though Hubby did change a few things.
Let's get down to it:
Prep time: 20 minutes
Cook time: 30 minutes
Serves: 6-8
Ingredients:
1 12-oz package of rotini pasta
2 cups shredded sharp cheddar cheese
1/2 cup grated parmesan cheese
3 cups soy milk
1/4 cup butter
2 1/2 tablespoons flour
2 tablespoons butter
1/2 cup bread crumbs
Directions:
1. Boil the pasta as directed. You can use macaroni instead if you like, but different pastas make for an interesting variation.
2. In a saucepan, melt the butter over medium-low heat. Stir in flour until completely combined and thickened. Add milk, stirring constantly. Finally, stir in the cheeses and continue to cook until the cheeses have melted and blended into the sauce.
3. In a skillet, toast your breadcrumbs.
4. Drain pasta and add into the cheese sauce.
5. Pour pasta and sauce into a large casserole dish, then top with toasted breadcrumbs.
Bake at 350 degrees F for 30 minutes.
That 30 minutes was torture, being able to smell the cheesy goodness waiting. When I came home that night I could smell that he was making something delicious before I even opened our front door.
But so worth it.
