So, obviously yesterday's post was an April Fool's Joke.
I do love animals and think locats are funny, but not enough to make a blog out of them!
And now, back to our regularly scheduled program.
This weekend I made a variation of a breakfast sandwich that I used to make a lot, and somehow made it even more of a belly-bomb than it already was. Don't look at this recipe expecting it to be healthy! This is a total cheat-day, I-don't-care kind of recipe, for those special days during which we devour everything in sight.
Okay it's not that bad...but it's filling, for sure.
I present to you: The waffle breakfast sandwich AKA the waffle breakfast grilled cheese.
This recipe is for two, but Hubby and I agreed after being thoroughly stuffed by this that just half a sandwich is enough for one person. That helps with the calories, too!
Let's get down to it:
Ingredients:
2 waffles
2 eggs
4 MorningStar sausage breakfast patties
2 slices American or Cheddar cheese
4 teaspoons butter
Directions:
1. Let's start with the eggs.
Crack those into a bowl--
--and beat them. Gently, with love.
2. Spray a small skillet with non-stick spray and pour in the eggs over low heat. Cover with the lid to help steam the eggs evenly.
Flip once the eggs are starting to set on the top, and cook for another 30-60 seconds.
3. Follow the microwave directions for the sausage patties. And set aside.
4. Grab yo' butta.
Spread half the butter on two of the waffles. In a medium to large non-stick skillet, set both waffles butter-side down over medium-low heat.
Add your cheese slices.
Egg patty, cut in half, strategically cut further to fit on one waffle each.
Add your sausage patties, two per sandwich, also strategically cut to fit on the waffles. The patties are little, so one wouldn't be enough per waffle.
Add your third and fourth waffles on top, buttered as well. See? It's pretty much a breakfast grilled cheese.
Cook on one side until the bottom of the waffle is starting to turn golden, then flip and repeat on the other side!
That's it!
