Well, folks, I didn't know how to make a quesadilla 'til I was almost out of college. So, sometimes there are late bloomers in the quesadilla world.
Besides--it's a quick, easy dinner and so good!
I will probably add some "fancier" ones later on, but this one's just a simple cheese quesadilla. Literally one of the easiest foods on the planet, amazingly fast, and super kid-friendly (if you have any).
Let's get down to it:
Prep time: 2 minutes
Cook time: ~5 minutes
Serves: 2
Ingredients:
4 small whole-wheat tortillas
3/4-1 cup shredded cheddar or Mexican blend cheese
1/2-3/4 cup salsa
2 heaping tablespoons sour cream
Yep, that's literally it.
Directions:
1. Spray a skillet with non-stick spray.
Grab a couple tortillas.
Load one of them up with half the cheese.
And now you have two options. One: Plop that open-faced on the skillet so the cheese has a little access to the heat first.
Then place the second tortilla on top once once it's already in the pan.
And press down slightly so they can get to know each other better.
Or!
Cheese step.
Then immediately put the second tortilla on.
And then into the pan.
Mind-blowing variation, I know. It will take you hours to decide which to do.
After about 3 minutes or so on one side, grab a flipper and pretend it's a pancake. (Is it just me or do those shadows look like one of those dramatic, cliche zoom-in-on-the-eyes movie shots?)
It should be a little toasty lookin' on the side that's been face-down.
Another 2-3 minutes there, then...yum! I love the crispiness on the top of quesadillas.
You can either cut them into four slices...
Or eight. I like the little wedges, personally. Especially using little tortillas like we did, they're adorable and tiny!
Rinse and repeat for the second quesadilla.
Then, slap some salsa in a little bowl.
Plop some sour cream on top.
The obligatory stretchy-cheese shot as you get a slice of quesadilla out to dip.
And enjoy! Could that get any easier? I think not!
